Lemon Berry Trifle

This Lemon Berry Trifle is a perfect springtime dessert. This trifle is beautiful, delicious, and filled with sweet, luscious berries. You decide what your trifle will look like with your choice of berries and cake.

Pound cake is the traditional choice for trifles, but use your favorite cake. Chocolate cake combined with strawberries, raspberries and blueberries is a delicious option. Not only is this lemon berry trifle beautiful and delicious, but it is a breeze to make. Not a baker? Use a prepared cake to make this trifle. Pound cake and loaf cakes are widely available in grocery stores. Mix up your fillings then just layer away. You can create a beautiful trifle in thirty minutes and everyone will be impressed.

It is especially important to make sure that your cream cheese is at room temperature. It will be lumpy if you try to mix it up with the whipped cream when it is cold. To bring it up to  temperature quickly, remove it from its packaging, cut it up into small pieces and spread it out on a plate for 20-30 minutes.

Instructions
  1. Place cleaned berries into a large bowl. Add granulated sugar, gently tossing until well mixed.
  2. Allow berries and sugar to sit at room temperature for at least 30 minutes to allow a syrup to form.
  3. In another large bowl or a stand mixer, whip the cream cheese and whipped topping together on medium-low until combined.
  4. With mixer on low, add lemon zest and juice, blending until well combined.
  5. Break cake up into bite size pieces.
  6. Once a syrup has formed from the berries and sugar, you can assemble your trifle in a large trifle bowl or 12 small trifle bowls.
  7. Place an even layer of the whipped topping mix on the bottom of the bowl. Use the back of a spoon or an inverted spatula to even the layer out.
  8. On top of the whipped topping mix, place a layer of cake pieces, facing the prettier pieces along the outside edge of the bowl. This layer does not have to be completely even or full. The berries will fill in any gaps.
  9. Spoon a layer of berries and its syrup on top of the cake pieces.
  10. Repeat the layers until you have reached the top of the bowl. Top with a final layer of whipped topping mixture.
  11. Cover top with plastic wrap and refrigerate at least one hour until well chilled.
  12. Right before serving, decorate the top of your trifle as desired with more whipped cream and berries.
