When I worked in the bakery business before my children were born, we used an artificial red glaze on berries to preserve freshness and to give them shine. After I left the bakery, I used it at home in my baking. I never thought twice about it until we discovered that my daughter was allergic to food coloring.
That glaze was the first thing to be thrown out. I created this all natural berry glaze because we love berries. Not only is it free from artificial ingredients, but this glaze tastes delicious.
This all natural berry glaze is great for strawberries, raspberries and blueberries! It will preserve freshness, add flavor and give the berries a beautiful shine. Use it to coat berries prior to topping or filling desserts or as a foundation for fresh berries to keep them securely in place.
Anytime you need to use berries, this glaze is a great addition.

Instructions
If you would like your glaze to be smooth, process berries in a blender or food processor. If you prefer a chunkier glaze, crush them with a fork.
To remove unwanted seeds, securely attach a cheesecloth to a small bowl with a rubber band then filter processed berries through the cheesecloth. This takes some time, but will result in a clearer glaze.
Food coloring is optional, but will give your glaze a deeper, brighter color.
In a small saucepan, combine all ingredients.
Over medium-low heat, stir continuously until the ingredients have combined and begin to thicken.
Remove from heat and store in a refrigerated, airtight, plastic container.
If you need to thin out the glaze before use, add 1 tsp of warm water at a time until the glaze reaches the desired consistency.
