So many people I know have a favorite guacamole recipe. Some like to keep it very simple, with mashed avocados, onions and a squeeze of lime. I have tried other recipes where it seems it contains everything but the kitchen sink. Of course, I love mine just the way I make it. I have been making it this way for a long time and it is always delicious.
Made with fresh avocados, tomatoes and cilantro, this recipe bursts with flavor. It takes just a few minutes to put together and is so worth the effort. Making guacamole can be a show all by itself. When we have company over, I slow down a little when making it and everyone always gets a kick out of it.
This guacamole is delicious served with just corn tortillas but it is also perfect to serve alongside our grilled fish tacos or our chicken enchilada casserole.

- In a medium bowl add olive oil, 2 tablespoons of red onion and 2 tablespoons of cilantro and muddle
- Add the avocados and onion; using two spoons crisscross together gently to mash the avocados
- Add the tomatoes, cilantro, lemon juice and salt - stir together gently to incorporate ingredients
- We recommend letting the guacamole chill for 1 hour before serving
- Serve with tortilla chips and enjoy!
* You can use any kind of hot pepper you like or omit entirely, this should be done to your preference.
